Soaring Veggie Snack

This snack is as cuddly as a teddy bear and as refreshing as a cucumber. Bring together the crunch of rice cakes with the cool, crisp taste of cucumbers for a snack that’s un-bear-ably delicious!

Ingredients

  • 1 GREENHOUSE english cucumber, sliced into rounds
  • 1 rice cake, any flavor
  • 1-2 tbsp of cream cheese
  • 1 slice of ham cut into small circles and big circles (a little smaller than the cucumber slices)

DIRECTIONS

  1. Spread the cream cheese on the rice cake in a circular pattern leaving a small border on the bottom and larger border on the top.
  2. Arrange cucumber slices in a triangle pattern on the rice cake. Position 2 slices at the top of the cream cheese circle to create ears and 1 slice near the bottom to form the nose.
  3. Place the small ham circles as eyes and one of the larger ham circles on top of the cucumber nose.
  4. Recreate with different flavors of rice cakes or cream cheese spreads.
