Bell Pepper Chicken Fajitas

Spicy and satisfying, this chicken and bell pepper dish is a flavor-packed meal. Tender chicken, crispy prosciutto, and greenhouse bell peppers are wrapped in warm tortillas for a delicious and easy-to-make meal.

Ingredients

  • 2 GREENHOUSE bell peppers
  • 4 boneless and skinless chicken breasts, cubed
  • 6 slices of prosciutto, chopped
  • 1 medium onion
  • ½ cup shredded mozzarella cheese
  • 3 tsp red chili pepper flakes
  • 1 tsp cayenne powder
  • 2 tbsp canola oil
  • (6) 6 inch flour tortillas
  • Salt and pepper to taste

DIRECTIONS

  1. Wash produce before cooking.
  2. Pre-heat oven to 400 °F.
  3. Slice bell peppers and onion into ¼ inch slices.
  4. In a large pre-heated pan, place canola oil and chicken, and allow it to sauté until the chicken is cooked half way.
  5. Add prosciutto, bell peppers, and onions to the pan.
  6. Add your red chili pepper flakes, cayenne powder, salt and pepper.
  7. Transfer mixture to an oven safe dish and top it with mozzarella cheese.
  8. Place dish into pre-heated oven until the cheese is melted. Remove dish from oven and serve with warmed flour tortillas.
