BBQ Chicken Tacos with Mango Salsa

A perfect mix of savory, spicy and sweet! These BBQ chicken tacos with mango salsa feature juicy grilled chicken topped with a vibrant mango salsa. Wrapped in warm tortillas, with Greenhouse grown peppers, they’re a fresh and flavorful twist on taco night.

Ingredients

For the BBQ Chicken:

  • 2-3 chicken breasts
  • 1 cup orange juice
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1/4 cup lemon juice
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 tsp kosher salt
  • 5 cloves garlic, minced
  • 6 flour or corn tortillas

 

For the Mango Salsa:

  • 1 mango, diced
  • 2 GREENHOUSE cocktail tomatoes, diced
  • 1 GREENHOUSE red bell pepper, diced
  • 1/4 red onion, diced
  • 2 tbsp cilantro, chopped
  • 1/4 cup of lime juice

DIRECTIONS

  1. Dice the mango, tomatoes, red bell pepper and red onion and mix together in a medium sized bowl. Chop and add the cilantro to the mix. Top off with lime juice and refrigerate overnight.
  2. Combine all the chicken marinade ingredients in a large bowl and add the chicken. Coat the chicken breast evenly and let the chicken marinate for 30 minutes.
  3. Turn on the BBQ to 400˚F and place the chicken on the grill for 5-7 minutes until it reaches and internal temperature of 165˚F.
  4. Remove the chicken from the BBQ and let sit for 10 minutes before slicing.
  5. Warm up tortillas on the grill for 30 seconds on each side.
  6. Serve on warmed tortillas with mango salsa and enjoy!
