Creamy Cucumber Bites

Creamy cucumber bites are refreshing appetizers that combine the crispness of Greenhouse grown cucumber slices with a creamy, flavorful topping. Perfect for parties or healthy snacks, these bite-sized treats are easy to assemble and add an elegant touch to any spread.

Serves: 20 bites

Ingredients

  • 4 GREENHOUSE English cucumbers
  • 1 pint GREENHOUSE grape tomatoes
  • 1 block cream cheese, at room temperature
  • 1 small container plain Greek yogurt
  • 3 tbsp fresh dill, minced
  • 1 tbsp powdered Ranch dressing mix (i.e. Hidden Valley)

DIRECTIONS

  1.  If you prefer to peel your Greenhouse cucumbers, please do so before slicing into rounds, about ½-inch thick. You can also partially peel them for a striped look. Set aside.
  2. Slice Greenhouse grape tomatoes in half or quarters to match the width of your cucumber slices. Set aside.
  3. In a bowl, combine cream cheese, Greek yogurt, dill and Ranch dressing powder. Using an electric mixer, mix for 1 to 2 minutes until ingredients are combined.
  4. Transfer the cheese mixture to a piping bag.*
  5. Pipe the cheese mixture onto the cucumber rounds, then top with a cherry tomato half!

 

*If you don’t have a piping back place a larger resealable freezer bag in a mug and fold the edges over the rim so you can scoop the cream cheese inside, then snip the corner off.
