Cucumber Pistachio Salad

The warm summer days are making us crave a refreshing and crisp salad to go with our BBQ. We love this Pistachio Feta Cucumber Salad made with our seedless English cucumbers.

Ingredients

  • ¼ cup apple cider vinegar
  • ½ tsp kosher salt
  • ½ red onion sliced thin
  • 2 GREENHOUSE english cucumbers, sliced thin
  • 2 tbsp fresh dill, chopped
  • 2 oz feta cheese, crumbled
  • ⅓ cup unsalted pistachios, roughly chopped
  • 2 tsp olive oil
  • ¼ tsp freshly ground black pepper
  • drizzle of balsamic glaze

DIRECTIONS

  1. In a large serving bowl combine the cucumbers, onion, dill, feta and pistachios.
  2. Add vinegar, olive oil, salt and black pepper.
  3. Toss everything together until coated then serve.
