Dumpling Bake

This easy to make one pan dumpling bake is the perfect cozy dish for busy nights. Tender dumpling sit in a rich and creamy spicy sauce served with Greenhouse grown fresh sliced cucumbers and peppers for a delicious comforting meal.

Ingredients

  • 1 GREENHOUSE English cucumber, sliced
  • 1 GREENHOUSE bell pepper, sliced
  • 1 can of coconut milk
  • 1/4 cup chicken broth
  • 3 tbsp red curry paste
  • 2 tbsp peanut butter
  • 2 cloves garlic, grated
  • 1 tsp ginger, grated
  • 2 tbsp soy sauce
  • 1 1/2 tbsp honey
  • 1/2 lime, juiced
  • 1 tsp seasame oil
  • 1 cup spinach
  • 18-20 frozen dumplings
  • 3 green onions, chopped
  • 1 tsp sesame seeds
  • Chili oil, garnish to taste
  • 2 cups of white rice, cooked

DIRECTIONS

  1. In a 9×13-inch baking dish, whisk together coconut milk, chicken broth, red curry paste, peanut butter, garlic, ginger, soy sauce, honey, lime juice, and sesame oil until smooth and well combined.
  2. Add in the spinach, sliced cucumbers and sliced bell peppers and coat evenly in the sauce.
  3. Place the frozen dumplings directly into the sauce in a single layer, making sure they don’t overlap. Spoon some of the sauce over the top of the dumplings.
  4. Cover the dish tightly with aluminum foil and bake at 375°F for 27–32 minutes, or until the dumplings are heated through and tender.
  5. Remove the foil in the last 5 minutes to allow the dumplings to get crispy on top.
  6. Sprinkle with green onions, diced cucumbers, diced peppers and sesame seeds, drizzle with chili oil and serve with rice.
