Ingredients

1 package mini GREENHOUSE cucumbers, cut into thirds
2 packages GREENHOUSE grape tomatoes
3 cups watermelon, cubed
1/3 cup crumbled feta cheese
1/4 cup mint leaves, whole

Dressing Ingredients

1/3 cup red wine vinegar
3 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tsp fresh garlic, minced
1/2 tsp dried oregano
1/4 tsp kosher salt
1/4 tsp black pepper
1/2 cup olive oil

DIRECTIONS

In a small bowl, combine all dressing ingredients and whisk vigorously. Set aside.
In a large bowl, combine cucumbers, tomatoes, watermelon, crumbled feta, and mint.
Drizzle with dressing. Toss and serve.
