Greenhouse Salsa

This salsa is a wonderful way to capture the flavor of tomatoes, cucumbers and bell peppers. Use as a filling for quesadillas, omelets and grilled cheese sandwiches, or as a topping for tostadas and burgers.

Ingredients

Dressing:

  • 2 tbsp spanish onion
  • 1 tsp garlic, minced
  • 2 tsp fresh lime juice
  • 2 tsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp sugar

 

Salsa Mix:

  • 1-1/2 cups GREENHOUSE tomatoes on the vine
  • 3/4 cup GREENHOUSE english cucumber
  • 3/4 cup GREENHOUSE yellow bell pepper
  • 3 tbsp cilantro
  • 2 tsp fresh jalapeƱo
  • 3/4 tsp ground cumin

DIRECTIONS

  1. To make the dressing, combine onion, garlic, lime juice, olive oil, salt and sugar. Set aside in the refrigerator to develop flavor for at least an hour or overnight.
  2. Finely chop tomatoes, cucumber, peppers, onion, cilantro and jalapeƱo. Place in bowl and set aside.
  3. When ready to serve, gently combine diced tomatoes, cucumber and peppers with cilantro, jalapeƱo, cumin and dressing.

 

Serve with tortilla chips for dipping.
