Grilled Tomato Salsa

Golden-hued yellow cherry tomatoes are charred to smoky perfection on the grill and tossed with tangy lime, briny capers, red onion, and fresh cilantro for a bright, savory salsa that elevates grilled meats, fish, or toasted sourdough. This vibrant dish comes together in just over 20 minutes—simple, seasonal, and unforgettable.

Ingredients

  • 2 pkgs (12 oz each) GREENHOUSE Yellow Cherry Tomatoes
  • ½ red onion
  • 1 ½ tbsp. capers
  • Salt and freshly ground black pepper
  • 1/3 cup coriander leaves
  • 2 tbsp. olive oil
  • 2 tbsp. fresh lime juice

DIRECTIONS

  1. Wash all produce before preparing your meal. Preheat barbeque to high.
  2. Dice red onion. Place in a bowl. Add tomatoes and capers and season with salt and pepper to taste. Toss to combine. Place a reusable grill mat on the preheated grill. Pour tomato mixture onto the grill mat. Arrange to ensure even grilling and avoid overcrowding.
  3. Close cover and grill about 5 minutes, stirring once until charred and tomatoes are starting to soften.
  4. Transfer grilled tomato mixture to a serving bowl. Add coriander, olive oil and lime juice.
  5. Serve warm over grilled fish or chicken or toasted sourdough.
