High Protein Breakfast Sandwich

Start your day off right with our high protein ready to go breakfast sandwichs! Made with Greenhouse grown tomatoes and peppers, breakfast sausage, eggs, cheese and spinach all stacked together on an English muffin for a delicious grab and go breakfast.

Ingredients

  • 3 GREENHOUSE cocktail tomatoes, diced
  • 2 GREENHOUSE bell peppers, diced
  • 6 eggs
  • 1 tbsp salt
  • 1 tbsp pepper
  • 6 Chicken breakfast sausage
  • 6 cheddar cheese slices
  • 1 cup frozen spinach
  • 1/2 cup cottage cheese
  • 6 english muffins

DIRECTIONS

  1. Preheat oven to 400°F.
  2. In a shallow baking dish, crack and mix together eggs, bell peppers, tomatoes, cottage cheese and spinach with salt and pepper.
  3. Bake at 400°F for 10 minutes.
  4. Add english muffins and sausage to a baking sheet and heat up in the oven for 5 minutes.
  5. Assemble to sandwiches, place sausage, egg then cheese on top of the bottom of an english muffin then wrap in tin foil or parchment paper. Repeat to make 6 sandwiches.
