Sausage and Peppers Sheet Pan Dinner

Ingredients

  • 1 GREENHOUSE red bell pepper, sliced
  • 1 GREEENHOUSE yellow bell pepper, sliced
  • 1 package Italian precooked sausage, sliced
  • 1 yellow onion, sliced
  • 3 tbsp olive oil
  • 2 tsp red wine vinegar
  • 2 garlic cloves
  • 1/2 tsp kosher salt
  • 1/2 dried basil
  • 1/2 dried oregano
  • 1/4 ground black pepper
  • 1/4 red pepper flakes

DIRECTIONS

  1. Preheat your oven to 400°F. Line a large rimmed baking sheet with parchment paper.
  2. Arrange the sliced sausage, bell peppers and onions on the pan evenly.
  3. Drizzle olive oil and red wine vinegar over top. Sprinkle with garlic, salt, basil, oregano, black pepper and red pepper flakes. Toss until the bell peppers, sausage and onions are evenly coated.
  4. Bake for 35 minutes, until the peppers are tender. Toss halfway through the cooking time, around 15 mins.
  5. Remove from the oven and serve hot.
