Sicilia Mac & Cheese

This rich and creamy mac and cheese is elevated with bold flavours and fresh vegetables, making it the ultimate comfort food. Best enjoyed as a main dish or paired with a crisp green salad or sparkling water.

Ingredients

  • 2 cups GREENHOUSE grape tomatoes, halved and divided
  • 8 oz Mafalda pasta, cooked according to package directions
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups whole milk
  • 125g cream cheese
  • 1/2 cup Parmesan, finely grated
  • 200g bocconcini, sliced
  • 2–3 tbsp balsamic glaze
  • 1/4 cup fresh basil, chopped
  • salt and pepper, to taste

DIRECTIONS

  1. Preheat oven to broil.
  2. Heat a large pot over medium heat. Add butter and stir until melted.
  3. Add flour and stir to make a paste. Cook for about 1 minute, stirring constantly.
  4. Slowly pour in milk, whisking until well combined. Cook for 4-5 minutes over medium- low heat, stirring frequently.
  5. On low heat, add cream cheese and Parmesan to the milk mixture. Stir until melted, about 5 minutes. Season to taste with salt and pepper.
  6. Add the cooked pasta and half of the grapetomatoes to the cheese sauce and gently mix.
  7. In a baking dish, pour in the pasta mixture.
  8. Top pasta with bocconcini and remaining
  9. Broil for 1-2 minutes or until the mozzarella is melted and turning golden brown. Remove from oven.
  10. Drizzle with balsamic glaze and garnish with fresh basil.
  11. Serve immediately.
