Tomato Dressing

This vibrant dressing blends Greenhouse cherry tomatoes with rice vinegar, miso, and toasted sesame oil, creating a rich umami flavor with a hint of sweetness. Perfect as a condiment over seared scallops or grilled chicken, stirred into a grain or rice salad, drizzled over soup, or used as a dip for bread instead of oil.

Ingredients

  • Half a pint of GREENHOUSE Cherry tomatoes
  • 1 tbsp rice vinegar
  • 1 tsp miso
  • 1/4 cup canola oil
  • 2 tsp toasted sesame oil
  • 1/4 tsp garlic salt
  • 2 green onions
  • 1 tbsp capers (optional)

DIRECTIONS

  1. Wash tomatoes, remove stems and cut in half.
  2. Drop tomatoes into a small blender. Add vinegar, miso, both oils and a generous pinch of garlic salt.
  3. Blend briefly to emulsify. Transfer to a small bowl.
  4. Chop green onions and capers if using. Stir into dressing.
  5. Refrigerated, dressing will keep for several days.
