Tomato Pie

This savory pie layers sweet and rich Greenhouse tomatoes with creamy pimento cheese in a flaky crust, creating a vibrant, cheesy dish perfect for summer gatherings. Baked until golden and bubbling, it’s a simple yet flavorful recipe that showcases the best of seasonal tomatoes.

Ingredients

  • 1 pint of GREENHOUSE tomatoes on the vine
  • 1 pint of GREENHOUSE brown/red tomatoes
  • 1 premade 9” pie crust
  • 1.5 cups tub pimento cheese spread
  • Salt and pepper to taste

DIRECTIONS

  1. Preheat the oven to 400°F degrees.
  2. Thinly slice GREENHOUSE tomatoes.
  3. Add one even layer of pimento cheese to the bottom of the pie crust.
  4. Top that layer with an even layer of tomatoes, alternating between types.
  5. Add another layer of cheese on top of the tomato layer.
  6. Top with a second layer of tomatoes.
  7. Sprinkle with salt and pepper.
  8. Bake for 50 to 60 minutes or until cheese is golden brown.
  9. Allow dish to cool completely before slicing.
  10. Serve and enjoy!
