Cucumber Smoothie

This refreshing smoothie is great to boost your health. Coconut water and cucumber are great for hydration, flushing toxins and contain lots of vitamins. Pineapple and lemon boost the immune system. Parsley, pineapple, and lemon are anti-inflammatories, with lemon also supporting the gastrointestinal system. This smoothie is not only healthy, but it tastes great – not too sweet and not too tart, the perfect balance.

Ingredients

  • 2 cups GREENHOUSE seedless cucumber, chopped (do not remove skin)
  • 1/2 cup coconut water
  • 1/2 lemon, peeled, seeded and chopped
  • 1 cup fresh pineapple, chopped and frozen overnight (prepare ahead of time)
  • 1 tbsp liquid raw unprocessed honey or agave syrup
  • 1/2 cup ice cubes, if not using frozen pineapple

DIRECTIONS

  1. Place all the ingredients in a high-speed blender and blitz on high for 1 minute, until smooth and creamy.
