Korean Chili Cucumbers

This quick and easy Korean-style cucumber salad is a refreshing and flavorful side dish. Crisp cucumber batons are marinated in a tangy and spicy vinaigrette for a delicious and healthy addition to any meal.

Ingredients

  • 1 GREENHOUSE cucumber
  • 1/2 cup sweet onion, chopped
  • 1 tsp garlic, chopped
  • 1 tsp fresh ginger, chopped
  • 1/4 cup rice vinegar
  • 1 tsp granulated sugar
  • 1 tsp Korean chili powder
  • 1/2 tsp salt
  • 1 green onion, chopped

DIRECTIONS

  1. Wash cucumber and cut into 2 in long batons.
  2. Toss the batons with onion, garlic, ginger, vinegar, sugar, Korean chili powder and salt.
  3. Set aside at room temperature for several hours to infuse flavors.
  4. Before serving, add the chopped green onion.
